I’ve never known how to cook a delicious roast chicken that is crispy (but not burnt) on the outside and tender and moist (but well cooked) on the inside. I saw a TV show once where the chicken was stuffed with some kind of lemon and lime with herbs or something… I don’t remember and then it was covererd with table salt that just crumbled off when it was done… it was one of Jamie Oliver’s recipes, does anyone remember? If not, what is a simple but delicious way of roasting a chicken?
